This is how I do it: It takes me about fifteen minutes to make the dough in my Kitchenaid Mixer. I use less water then they call for as I find the dough to be too wet. I like slightly more than one half cup per pizza. Then one hour for the dough to rise. About fifty minutes into the rise I turn on the oven both upper and lower to 800 degrees.. When it is time I punch down the dough and roll it out on a well-floured surface. Be sure to flour the underside well so it doesn't stick to the peel. Using my peel as a template I cut the dough round. I recommend watching a YouTube video on the construction of a pizza if you haven't done it before. It is crazy easy. Then I put the pizza in and close it up. I set my timer to two settings, one at three minutes and the other at six. At three minutes using a spatula turn the pizza 90 degrees and lance any air pockets and close it up again. Then at six minutes it is done. I let it sit for 10-15 minutes and I cut it and eat my pizza. If anyone says it doesn't work, they can't be too swift. That's it. I make pizza about once a week. It is a great machine. And no, they don't pay me.
